Parsley is widely used in Middle Eastern, European, Brazilian and American cooking. Broadleaf or Flat Parsley has a robust taste that is suited to flavouring dishes, rather than garnishing. Rubbed (dried) Parsley softens upon coming into contact with moisture and can be added directly to egg dishes such as scrambled eggs and omelettes. In mashed potato, parsley adds colour and flavour. Use in salad dressings and mayonnaise.
